  • 200g chicken mince
  • 1 garlic clove
  • 1 tbsp oil
  • 1 ½ cups low-sodium chicken broth
  • ¾ cup coconut milk
  • 3 tbsp peanut butter
  • 2 instant ramen noodle cakes
  • 2 handfuls baby spinach
  • 2 tbsp chopped peanuts

Instructions

  1. Heat oil in a skillet over high heat and sauté minced garlic until golden.
  2. Add chicken mince and cook until browned, about 2 minutes.
  3. Stir in red curry paste, curry powder, and soy sauce; cook for another minute.
  4. Pour in chicken stock and simmer for one more minute.
  5. Add noodle cakes to the pan, submerging them in the broth mixture.
  6. Cook noodles undisturbed for 45 seconds; flip and separate with wooden spoons after another 30 seconds.
  7. Stir in coconut milk, peanut butter, and cider vinegar until combined.
  8. Toss in baby spinach until wilted (about 30 seconds).
  9. Serve with chopped peanuts on top.
