  • 3 cream cheese bricks (softened)
  • 1 cup brown sugar
  • ½ teaspoon salt
  • 2 teaspoons pure vanilla extract
  • 1 cup sour cream
  • 1/3 cup reduced apple cider
  • 1 teaspoon cinnamon
  • 3 large eggs
  • 2 tablespoons all-purpose flour

Instructions

  1. Reduce fresh apple cider with mulling spices in a pot over high heat until syrupy.
  2. Preheat oven to 350°F and prepare crust by blending cookie crumbs, melted butter, salt, and powdered sugar.
  3. Press crust into an 8-inch springform pan and bake for 10 minutes; cool completely.
  4. Lower oven to 325°F, then beat cream cheese and brown sugar until smooth.
  5. Mix in sour cream, vanilla extract, salt, cinnamon, and reduced apple cider until creamy.
  6. Add eggs one at a time and flour gently; pour filling into crust.
  7. Bake in a water bath for about 90 minutes until set but jiggly in the center.
  8. Cool gradually in the oven then chill overnight before serving.
