  • 1 cup light brown sugar, packed
  • 1 large egg, room temperature
  • 1 tsp vanilla extract
  • 1 cup apple cider, reduced to ¼ cup
  • ½ cup whole milk
  • ½ cup unsalted butter, softened
  • 3 cups powdered sugar
  • ¼ cup reduced apple cider
  • 1 tsp vanilla extract
  • Pinch of salt
  • ½ cup store-bought caramel sauce
  • Pinch of flaky sea salt (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). In a large bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves.
  2. In another bowl, beat together the softened butter and light brown sugar until light and fluffy.
  3. Add in your room temperature egg and vanilla extract. Mix well until everything is combined.
  4. Carefully add in the reduced apple cider and whole milk into your mixture. Stir until fully combined.
  5. Using a spoon or cookie scoop, drop dollops of cookie batter onto lined baking sheets. Bake for about 10 minutes or until they are slightly golden around the edges. Allow them to cool completely before filling.
  6. To prepare the filling, beat together softened butter and powdered sugar until smooth. Then add in reduced apple cider and vanilla extract along with a pinch of salt. Mix until creamy!
  7. Take one cooled cookie half and spread or pipe on a generous amount of caramel filling before topping it with another cookie half.
