  • 350 g Lotus biscoff cookies
  • 150 g unsalted butter (melted)
  • 3 tart apples (peeled, cored, and sliced)
  • 50 g brown sugar
  • 1 teaspoon ground cinnamon
  • 2 teaspoons cornstarch
  • 690 g cream cheese (softened to room temperature)
  • 75 g granulated sugar
  • 100 g Greek yogurt
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 3 large eggs (room temperature)
  • 55 g unsalted butter (melted) for streusel topping
  • 50 g all-purpose flour for streusel topping
  • 50 g brown sugar for streusel topping
  • 20 g rolled oats for streusel topping

Instructions

  1. Preheat your oven to 180°C (350°F). Crush the biscoff cookies into fine crumbs and mix them with melted butter until well combined. Press this mixture firmly into the bottom of a springform pan.
  2. In a bowl, combine your sliced apples, brown sugar, cinnamon, and cornstarch. Toss until evenly coated.
  3. In another bowl, beat together softened cream cheese and granulated sugar until smooth. Add Greek yogurt, vanilla extract, and spices—mix until well blended. Incorporate eggs one at a time, ensuring each one is fully mixed before adding another.
  4. Pour half of the cheesecake filling over your crust in the springform pan. Layer on half of your apple mixture, then pour over the remaining cheesecake filling followed by more apple slices on top.
  5. In a separate bowl, mix melted butter with flour, brown sugar, and oats until crumbly. Sprinkle this mixture generously over your layered cheesecake.
  6. Bake your cheesecake in the preheated oven for about 85 minutes or until it's set around the edges but still slightly jiggly in the center. Once baked, turn off the oven and leave it inside for an hour to cool gradually. Let your cheesecake cool completely at room temperature before refrigerating for at least four hours.
