  • 175 g unsalted butter (softened)
  • 175 g light brown sugar
  • 3 large eggs
  • 175 g self-raising flour
  • 1/2 tsp cinnamon (for cupcakes)
  • 1/4 tsp mixed spice (for cupcakes)
  • 175 g unsalted butter (for frosting)
  • 350 g icing sugar
  • 1 1/2 tsp cinnamon (for frosting)
  • 23 tbsp milk

Instructions

  1. Prepare the apple filling by cooking chopped apples with light brown sugar, cornflour, cinnamon, and mixed spice until soft.
  2. For the crumble topping, mix plain flour, light brown sugar, and cinnamon; rub in butter until crumbly and bake until golden.
