  • 175 g butter or baking spread (softened, unsalted)
  • 175 g light brown soft sugar (for cupcakes)
  • 3 large eggs
  • 175 g self-raising flour
  • 1/2 tsp cinnamon (for cupcakes)
  • 1/4 tsp mixed spice (for cupcakes)
  • 175 g butter (softened, unsalted, for frosting)
  • 350 g icing sugar
  • 1 1/2 tsp cinnamon (for frosting)
  • 23 tbsp milk

Instructions

  1. Prepare the apple filling by cooking chopped apples with sugar and spices until softened; let cool.
  2. Make the crumble topping by mixing flour, sugar, and butter until crumbly; bake until golden.
  3. For the cupcakes, cream together butter and sugar, add eggs, then fold in flour and spices; bake until golden.
  4. Once cooled, fill each cupcake with the apple mixture.
  5. Prepare buttercream frosting by creaming butter, adding icing sugar and cinnamon; frost cupcakes generously.
  6. Top each frosted cupcake with remaining apple filling and crumble topping.
