  • 2 kg apples (Fuji, Royal Gala, or Pink Lady)
  • 150 g granulated sugar (for apples)
  • 1 tbsp cornstarch
  • 4 egg yolks
  • 600 ml milk (whole, skimmed, lactose-free, or plant-based)
  • 50 g granulated sugar (for custard)
  • 2 tsp vanilla bean paste
  • Salt

Instructions

  1. Preheat your oven and slice the apples thinly. Toss them in sugar, salt, and cornstarch.
  2. Spread the apple mixture in a baking dish and bake until tender.
  3. While baking, whisk together egg yolks, cornstarch, milk, sugar, salt, and vanilla bean paste in a saucepan over low heat until thickened.
  4. Layer the baked apples and custard alternately in a dish.
  5. Allow to cool completely before chilling in the refrigerator.
