  • 2 kg apples (Fuji, Royal Gala or Pink Lady)
  • 1 tsp salt
  • 1 tbsp cornstarch
  • 4 egg yolks
  • 2 tbsp cornstarch
  • 600 ml milk (whole, skimmed, lactose-free or plant-based)
  • 50 g granulated sugar
  • 1/4 tsp salt
  • 2 tsp vanilla bean paste

Instructions

  1. Preheat your oven and prepare the apples by thinly slicing them and tossing with granulated sugar and salt.
  2. Layer the apple slices in a baking dish and roast until golden and tender.
  3. While the apples are roasting, whisk together egg yolks, cornstarch, milk, sugar, salt, and vanilla bean paste in a saucepan over medium heat until thickened.
  4. Once both components are ready, assemble your mille feuille by alternating layers of roasted apples and custard in your chosen mold.
  5. Chill in the refrigerator for at least one hour before serving to allow flavors to meld.
