  • 12 thick-cut slices of brioche bread (preferably dried overnight)
  • 1 3/4 lb apples (peeled and diced)
  • 4 tbsp salted butter
  • 2 1/2 tbsp all-purpose flour
  • 1 tsp apple pie spice
  • 3/4 cup brown sugar
  • 1/2 cup water
  • 1 cup milk
  • 1 cup heavy cream
  • 1 1/2 tbsp salted butter
  • 1/4 cup + 3 tbsp granulated sugar
  • Pinch of salt
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • Optional: turbinado sugar for topping
  • 4 eggs (at room temp)

Instructions

  1. Preheat oven to 350°F and grease a baking dish.
  2. For the apple filling, melt butter in a saucepan, then add flour and apple pie spice. Stir in brown sugar, apples, and water; cook until apples soften.
  3. In another saucepan, combine milk, cream, salted butter, granulated sugars, salt, cinnamon, and vanilla over medium-low heat. Remove from heat and whisk in eggs one at a time.
  4. Cut brioche into cubes; layer one-third in the baking dish followed by one-third of the apple filling. Repeat layers twice more. Pour custard over all layers.
  5. Bake for 35-40 minutes until golden brown and slightly wobbly in the center.
