  • 8 cups peeled and diced apples (preferably Granny Smith)
  • 2 cups apple juice (organic recommended)
  • Juice and zest from 1 small lemon
  • 1 tbsp apple cider vinegar
  • Pinch of salt
  • 3 tbsp pectin
  • 1.5 tsp ground cinnamon
  • 0.5 tsp ground ginger
  • 0.5 tsp ground cardamom
  • 0.25 tsp ground cloves
  • 0.25 tsp ground nutmeg
  • 3 cups white granulated sugar

Instructions

  1. In a large pot, combine diced apples, apple juice, lemon zest and juice, apple cider vinegar, and salt. Bring to a boil over medium-high heat.
  2. Reduce heat and simmer for about 10–12 minutes until apples are tender.
  3. Stir in spices and gradually sprinkle in pectin while mixing well. Increase heat to high until a rolling boil occurs.
  4. Add sugar all at once, stir continuously for one minute before removing from heat.
  5. Pour jam into sterilized jars for immediate use or follow canning instructions for long-term storage.
