  • 3 tablespoons granulated sugar
  • 2 tablespoons light brown sugar
  • ½ cup, plus 1 tablespoon all-purpose flour
  • ¼ teaspoon baking soda
  • ⅛ teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a muffin tin.
  2. In a small bowl, mix flour, cold butter, sugars, salt, and cinnamon until crumbly for the streusel topping.
  3. In another bowl, whisk sour cream, pumpkin, juice, sugars, egg yolk, and vanilla until smooth for the muffin batter.
  4. In a separate bowl, combine flour, baking soda, salt, and spices. Gently fold into the wet ingredients.
