  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 cups unsalted butter, cold and cubed
  • 1 large egg, lightly beaten
  • 2 cups dried apricots, chopped
  • 1 1/2 cups water
  • 1/2 cup granulated sugar (for filling)
  • 2 tablespoons fresh lemon juice

Instructions

  1. Prepare the filling by simmering chopped apricots, water, and sugar in a saucepan until tender. Stir in lemon juice and let cool.
  2. Preheat oven to 375°F (190°C) and grease a baking pan. In a bowl, mix flour, sugar, baking powder, and salt. Cut in cold butter until crumbly.
  3. Reserve some dough for topping and press the remaining into the pan to form the crust. Spread the cooled apricot filling over it.
  4. Crumble reserved dough on top and bake for about 30-35 minutes until golden brown.
  5. Allow to cool completely before cutting into squares.
