  • 3/4 cup packed light brown sugar
  • 3/4 cup granulated white sugar
  • 2 teaspoons vanilla extract
  • 3/4 teaspoon salt
  • 3 1/2 cups all-purpose flour
  • 1 1/2 cups apricot jam
  • Powdered sugar for sprinkling

Instructions

  1. Preheat oven to 325 degrees F and spray a 9×13 inch pan with nonstick spray.
  2. In a large bowl, cream together the butter and sugars until light and fluffy. Add vanilla and salt; mix well.
  3. Gradually beat in the flour until combined, forming a smooth dough. Divide dough in half; wrap one half and chill for 30 minutes.
  4. Press the other half firmly into the prepared pan to form the crust.
  5. Bake for about 20 minutes until edges are lightly browned.
  6. Spread apricot jam evenly over the baked crust.
  7. Crumble the chilled dough over the jam layer.
  8. Return to oven and bake for an additional 30 minutes until topping is golden brown.
  9. Cool completely on a wire rack before dusting with powdered sugar and cutting into bars.
