  • 0.5 oz garlic, minced (about 4 medium cloves)
  • 2.2 oz shallot, thinly sliced (about 1 large shallot)
  • 0.6 oz ginger, grated
  • 5 oz carrot, julienned (about 1 large carrot)
  • 3.5 oz fresh shiitake, sliced
  • 15 oz baby bok choy (about 3 whole bundles)
  • 23 cups shredded and cooked chicken (or leftover turkey)
  • 14 oz rice noodles (ramen noodles or shirataki noodles)
  • 2 tbsp toasted sesame oil
  • Coarse sea salt, to taste
  • 32 oz chicken stock
  • 2 tbsp fish sauce, or to taste
  • Half one whole lime juice, or to taste
  • Garnish cilantro, chopped (optional)
  • 12 whole jalapeno peppers, sliced (optional)

Instructions

  1. Mince the garlic and slice the shallots. Combine grated ginger, julienned carrots, and sliced shiitake mushrooms in separate bowls.
  2. Cook rice noodles according to package instructions; drain and toss with oil.
  3. In a large pot over low heat, warm toasted sesame oil, sauté garlic and shallots until fragrant.
  4. Add ginger, carrots, and shiitake mushrooms; sauté for 2 minutes.
  5. Pour in chicken stock, cover, and simmer for 4-5 minutes.
  6. Stir in shredded chicken and bok choy; simmer for 1 more minute.
  7. Add cooked noodles and season with fish sauce to taste. Drizzle lime juice before serving.
