  • 12 oz penne or fusilli pasta
  • 3 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 medium red onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1 cup crumbled feta cheese
  • 1/4 cup fresh basil leaves, chopped
  • 1/4 cup fresh parsley, chopped
  • 1 tsp dried oregano
  • Salt and black pepper, to taste
  • 1 lemon, juiced and zested

Instructions

  1. Boil salted water in a large pot. Cook pasta according to package instructions until al dente. Drain.
  2. In a skillet over medium heat, heat olive oil. Sauté minced garlic for one minute until fragrant.
  3. Add sliced onion and bell pepper; cook for three to four minutes until softened.
  4. Stir in cherry tomatoes and olives; cook for two more minutes.
  5. Reduce heat to low; add drained pasta and toss gently to combine.
  6. Fold in crumbled feta cheese, herbs, and season with salt and pepper.
  7. Finish with lemon juice and zest; stir well before letting it rest for a few minutes.
  8. Serve warm or at room temperature.
