  • 3 cups butternut squash, peeled, seeded, cubed
  • 340 g Brussels sprouts, trimmed and halved
  • 225 g bow tie pasta
  • 340 g cooked smoked sausage (chicken or turkey)
  • 5 cloves garlic, minced
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • salt and pepper to taste
  • ¼ teaspoon smoked paprika
  • fresh thyme leaves

Instructions

  1. Preheat the oven to 200°C (400°F). Toss the butternut squash in olive oil with salt and pepper. Roast on a parchment-lined baking sheet for 15-20 minutes until tender.
  2. Prepare the Brussels sprouts by tossing them with olive oil, salt, and pepper on a separate baking sheet. Roast alongside the squash for about 20-30 minutes until golden.
  3. Cook bow tie pasta in salted boiling water according to package directions; reserve some pasta water before draining.
  4. In a skillet, sauté sliced smoked sausage until browned. Remove and set aside.
  5. In the same skillet, sauté minced garlic in butter until fragrant; add drained pasta along with seasonings.
  6. Combine roasted vegetables and sausage into the pasta skillet; toss gently before serving.
