  • 3 cups butternut squash, peeled and cubed
  • 340 g Brussels sprouts, trimmed and halved
  • 225 g bow tie pasta
  • 340 g cooked turkey sausage (or chicken sausage)
  • 5 cloves garlic, minced
  • 1 tablespoon olive oil
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • ¼ teaspoon smoked paprika
  • Fresh thyme leaves

Instructions

  1. Preheat oven to 200°C. Toss cubed butternut squash with olive oil, salt, and pepper; spread on a baking sheet.
  2. Trim Brussels sprouts and toss with olive oil; add to another baking sheet. Roast both for about 20 minutes until tender.
  3. Boil salted water in a large pot; cook bow tie pasta according to package directions. Reserve pasta water before draining.
  4. In a skillet over medium heat, brown sliced sausage until caramelized.
  5. Add minced garlic; sauté for 1 minute before adding butter and reserved pasta water.
  6. Combine roasted vegetables and fresh thyme with the pasta in the skillet; gently mix everything together.
