  • 2 ripe avocados
  • 3 tablespoons lime juice
  • 2 cloves garlic (minced)
  • 1/2 jalapeño (deseeded and minced)
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon kosher salt
  • 1/4 cup fresh cilantro (finely chopped)

Instructions

  1. Hard boil the eggs by placing them in a saucepan covered with water. Bring to a boil, then cover and remove from heat for about 18 minutes. Prepare an ice bath and transfer eggs to cool.
  2. Once cooled, cut eggs in half lengthwise and scoop out yolks into a food processor. Add avocados, lime juice, garlic, jalapeño, cayenne pepper, and salt; blend until smooth and creamy.
  3. Fold in chopped cilantro gently and fill egg whites with the avocado mixture using a spoon or piping bag.
  4. Garnish with additional cilantro and cayenne before serving.
