- 1.5 lb cod fillet pieces (4–6 pieces)
- 5 tbsp fresh lemon juice
- 5 tbsp extra virgin olive oil
- 2 tbsp melted butter
- 5 garlic cloves (minced)
- 1/3 cup all-purpose flour
- 1 tsp ground coriander
- 3/4 tsp sweet Spanish paprika
- 3/4 tsp ground cumin
- 3/4 tsp salt
- 1/2 tsp black pepper
- Preheat your oven to 400°F (200°C).
- In a shallow bowl, mix lemon juice, olive oil, and melted butter; set aside.
- In another bowl, combine flour with coriander, paprika, cumin, salt, and pepper.
- Pat cod dry and dip each piece into the lemon mixture followed by the flour mixture; shake off excess.
- Heat 2 tbsp olive oil in an oven-safe skillet over medium-high heat. Sear cod for about 2 minutes on each side until golden.
- Add minced garlic to the reserved lemon mixture and drizzle over the cod.
- Transfer skillet to the oven and bake for approximately 10 minutes or until fish flakes easily.
