  • 2 large chicken breasts
  • 4 ounces cream cheese
  • 3/4 cup heavy cream
  • 4 cloves garlic
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • 1/4 cup grated Parmesan cheese
  • 3/4 cup grated mozzarella cheese
  • 8 ounces sun-dried tomatoes
  • 3/4 cup fresh spinach
  • Kosher salt and freshly ground black pepper

Instructions

  1. Preheat your oven to 400°F (204°C).
  2. Slice chicken breasts horizontally to create four thin fillets. Place in a baking dish, season with salt and pepper, then sprinkle half of the minced garlic on top.
  3. In a bowl, blend softened cream cheese with heavy cream until smooth. Mix in remaining garlic, onion powder, paprika, Italian seasoning, salt, pepper, Parmesan cheese, and half of the mozzarella.
  4. Spread the cream cheese mixture over the chicken fillets. Add chopped sun-dried tomatoes and drizzle with reserved oil.
  5. Cover loosely with foil and bake for 20 minutes.
  6. Remove foil; stir in spinach and top with remaining mozzarella. Bake uncovered for another 10 minutes until bubbly.
  7. Allow to rest briefly before serving.
