  • 2 pounds baby potatoes, halved
  • 1/2 cup red onion, finely chopped
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh basil, chopped
  • 1/4 cup balsamic vinegar
  • 1/4 cup olive oil
  • 1 tablespoon Dijon mustard
  • 1 teaspoon honey
  • Salt and pepper to taste

Instructions

  1. Cook the halved baby potatoes in a large pot of salted water until fork-tender (15–20 minutes). Drain and cool.
  2. In a small bowl, whisk balsamic vinegar, olive oil, Dijon mustard, honey, salt, and pepper together.
  3. In a large mixing bowl, combine cooled potatoes, red onion, and cherry tomatoes. Pour dressing over the mixture and toss gently.
  4. Fold in fresh parsley and basil. Adjust seasoning if necessary.
  5. Serve warm or chill for at least 30 minutes to meld flavors.
