  • 3 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon red pepper flakes (optional)
  • 2 tablespoons chopped fresh parsley (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Clean the mushrooms gently with a damp cloth and halve if large.
  3. In a bowl, combine balsamic vinegar, olive oil, garlic, thyme, salt, black pepper, and red pepper flakes.
  4. Toss the mushrooms in the marinade until well coated; let sit for 5 minutes.
  5. Spread the mushrooms evenly on the baking sheet in a single layer.
  6. Roast for 20–25 minutes, stirring halfway through until golden brown.
  7. Garnish with fresh parsley and serve warm.
