  • 1/2 cup granulated sugar
  • 1 cup whole milk
  • 2 tsp vegan gelatin powder
  • 1 tbsp vanilla extract
  • 4 large egg yolks

  1. Bloom the vegan gelatin in cold water according to package instructions until soft.
  2. In a saucepan, combine milk, sugar, and half of the heavy cream. Heat gently until warm.
  3. Whisk the egg yolks in a separate bowl until pale; slowly add warm milk mixture while whisking.
  4. Return everything to the saucepan and cook on low heat until thickened (about 5-7 minutes).
  5. Stir in bloomed vegan gelatin until dissolved, then fold in remaining heavy cream.
  6. Chill until set (several hours or overnight). Serve garnished with fresh fruits or chocolate.
