  • 1 cup uncooked quinoa
  • 1 (15 ounce) can black beans
  • 2 cups shredded red cabbage
  • 1 cup sweet corn
  • 2 roma tomatoes
  • 1 avocado
  • Greek yogurt ranch dressing

Instructions

  1. Cook the Chicken: Place chicken in a slow cooker and cover with BBQ sauce. Cook on high for 2.5-3 hours until tender. Shred and keep warm.
