  • 12 lbs. fresh salmon
  • 2 tablespoons brown sugar
  • 2 teaspoons smoked paprika
  • 2 teaspoons onion powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon kosher salt
  • 2 tablespoons olive oil
  • 2 mangoes, diced
  • 1 avocado, diced
  • 1/4 cup minced cilantro
  • 1/4 cup minced red onion
  • 1/2 jalapeño, minced (optional)
  • 1 teaspoon honey
  • 2 tablespoons lime juice
  • 1 teaspoon lime zest
  • salt to taste
  • 1 1/2 cups of rice

Instructions

  1. Prepare the salsa by mixing diced mangoes, avocado, cilantro, red onion, jalapeño (if using), honey, lime juice, and salt in a bowl. Set aside.
  2. Cook rice according to package instructions.
  3. Preheat the oven to 475°F (or 500°F for broiling). Line a baking sheet with foil.
  4. In a bowl, combine brown sugar, smoked paprika, onion powder, garlic powder, chili powder, kosher salt, and olive oil into a paste.
  5. Place salmon skin side down on the prepared baking sheet and rub the spice paste generously over it.
  6. Bake for 6-12 minutes until salmon flakes easily with a fork.
  7. Assemble bowls by placing rice at the bottom, adding flaked salmon on top, and generously spooning over mango avocado salsa.
