  • 2 pounds stewing beef (chuck or round)
  • 2 tablespoons olive oil
  • 1 large onion (diced)
  • 3 cloves garlic (minced)
  • 3 medium carrots (chopped)
  • 2 stalks celery (chopped)
  • 5 medium white potatoes (quartered)
  • 3 cups low sodium beef stock
  • 1/2 cup apple vinegar
  • Tomato paste
  • Tomato sauce
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a Dutch oven, heat olive oil over medium-high heat. Season the beef with salt and pepper, then brown it in the pot.
  3. Remove the beef and sauté onions, garlic, carrots, and celery in the same pot until softened.
  4. Return the beef to the pot and add apple vinegar, tomato paste, and stock; stir well.
  5. Mix in quartered potatoes and cover the pot. Transfer it to the oven for about 3 hours.
  6. In the last half hour of cooking, add frozen green beans if desired.
  7. Once tender, serve hot with crusty bread and garnish with fresh parsley.
