  • 2 tablespoons olive oil
  • 4 yellow onions (thinly sliced)
  • 2 pounds Yukon Gold potatoes (washed and chopped)
  • 4 tablespoons salted butter (or non-dairy butter)
  • 3/4 cup half & half or full-fat coconut milk (or dairy-free milk)
  • 1 teaspoon kosher salt
  • Optional garnishes: 1 cup grated Parmesan cheese, chopped chives, fresh thyme, and sage

Instructions

  1. Heat the olive oil over medium heat in a skillet. Add the sliced onions and cook for 40–50 minutes until caramelized.
  2. Boil chopped Yukon Gold potatoes in salted water until fork-tender (about 20 minutes). Drain.
  3. Mash the potatoes in the pot and mix in butter, kosher salt, and half & half or coconut milk until smooth.
  4. Stir in half of the caramelized onions and grated Parmesan cheese until well combined.
  5. Transfer to a serving bowl, top with remaining caramelized onions, chives, thyme, and sage. Serve hot.
