  • 2 sheets of puff pastry (square shaped)
  • 2 tablespoons of honey
  • 100 grams of blue cheese, crumbled
  • 100 grams of grated Parmesan cheese
  • 50 grams of walnuts, chopped
  • 68 sprigs of fresh thyme leaves
  • 1 tablespoon of milk
  • Sea salt and cracked pepper

Instructions

  1. Preheat your oven to 180C (350F) or 200C (390F) for non-fan ovens.
  2. Drizzle honey over each puff pastry sheet.
  3. Evenly distribute the walnuts, blue cheese, Parmesan cheese, thyme leaves, sea salt, and cracked pepper on top.
  4. Roll each sheet tightly and cut in half lengthwise.
  5. Twist each piece into round coils on a baking paper-lined tray.
  6. Brush with milk for a golden finish.
  7. Bake for 25-30 minutes until puffed and golden brown.
