  • 1 tablespoon espresso powder
  • ¾ cup (165 g) brown sugar
  • ¼ cup (50 g) granulated sugar
  • 1 large egg, room temperature
  • ½ tablespoon vanilla extract
  • ¼ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¼ cups (175 g) all-purpose flour
  • ½ cup (80 g) Heath toffee bits with chocolate
  • Flaked sea salt for topping

Instructions

  1. In a medium saucepan over medium heat, melt unsalted butter until golden brown and nutty-smelling. Stir in espresso powder and cool in the fridge for 1-2 hours.
  2. Beat chilled brown butter with both sugars until fluffy (3-4 minutes).
  3. Mix in one large egg and vanilla extract until smooth.
  4. Add dry ingredients (baking powder, baking soda, salt, all-purpose flour) on low speed until combined.
  5. Fold in toffee bits evenly.
  6. Scoop dough into balls and chill for at least 2 hours (up to 24 hours).
  7. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper and place dough balls on it, sprinkling with flaked sea salt.
  8. Bake for 11-13 minutes until edges are golden and centers remain soft. Cool slightly before transferring to a wire rack.
