  • 5 pounds red potatoes (chopped)
  • 1/3 cup milk
  • 1/2 cup sour cream
  • 3/4 cup butter
  • 23 tablespoons fresh parsley (or 2 teaspoons dried)
  • 1 to 5 teaspoons horseradish sauce (to taste)
  • 1 & 1/2 teaspoons salt
  • 3/4 teaspoon pepper
  • 2 cloves garlic (minced)
  • 1 & 1/2 teaspoons onion powder
  • 1/3 cup Parmesan (grated)

Instructions

  1. Boil the chopped red potatoes in salted water until fork-tender, about 20-35 minutes.
  2. Drain the potatoes and return them to the pot or a large bowl. Add milk, sour cream, salt, pepper, garlic, onion powder, parsley, and Parmesan cheese. Mash until creamy.
  3. In a separate pan, melt butter over medium heat until it turns golden brown. Pour over the mashed potatoes or drizzle individually when serving.
