  • 320 g dark brown sugar
  • 15 g baking powder
  • 1 teaspoon kosher salt
  • 1 tbsp cinnamon
  • 2 tsp cardamom
  • 1 tsp ginger
  • 1 tsp allspice
  • 1 tsp nutmeg
  • 1 tsp cloves
  • 140 g unsalted butter (room temp)
  • 100 g neutral oil
  • 283 g whole milk (room temp)
  • 2 eggs (room temp)
  • 1 tbsp vanilla extract
  • 227 g unsalted butter (room temp)
  • 12 oz cream cheese (cold)
  • 340 g powdered sugar (sifted)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease two 9-inch round cake pans and line them with parchment paper.
  2. In a large mixing bowl, whisk together the flour, baking powder, salt, and all spices: cinnamon, cardamom, ginger, allspice, nutmeg, and cloves.
  3. In another bowl, beat together the unsalted butter and dark brown sugar until light and fluffy.
  4. Add the room temperature eggs one at a time, followed by the vanilla extract. Slowly add in the whole milk and neutral oil while mixing until well combined.
  5. Gradually add the dry mixture into the wet ingredients and mix gently until just combined.
  6. Pour the batter evenly into prepared pans and smooth out the tops. Bake for about 35 minutes or until a toothpick inserted into the center comes out clean. Let them cool before frosting.
  7. For the frosting, beat together room temperature butter and cold cream cheese until smooth. Gradually add in sifted powdered sugar until you reach your desired sweetness.
  8. Once cooled, place one layer of cake on a serving plate and spread frosting on top before adding the second layer. Finish by frosting the top and sides of the cake.
