  • 3 cloves garlic (minced)
  • 1 cup shredded chicken or cubed tofu
  • 1 tsp fresh thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 1 cup cooked pasta or rice (optional)

Instructions

  1. In a large pot over medium heat, add olive oil and sauté diced onions until translucent.
  2. Stir in chopped carrots and celery; sauté for about 5 minutes until softened.
  3. Add minced garlic, thyme, and bay leaf; cook for another minute until fragrant.
  4. Pour in vegetable broth and add shredded chicken or cubed tofu. Bring to a gentle boil.
  5. Season with salt and pepper; reduce heat and let simmer for about 20 minutes.

  7. Remove bay leaf before serving hot.
