  • 1 1/2 pounds butternut squash (peeled, seeded, and cubed)
  • 2 gala apples (peeled, cored, and diced)
  • 1 tablespoon cinnamon
  • 1 teaspoon vanilla extract
  • 2 tablespoons brown sugar or honey
  • 2 tablespoons butter (or coconut oil for vegan option)
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/4 cup raisins
  • 1/4 cup pecans or walnuts
  • 1/4 cup dried cranberries

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the cubed butternut squash, diced apples, cinnamon, vanilla extract, and brown sugar.
  3. Season with salt and black pepper; mix well.
  4. Transfer the mixture to a baking dish with a lid. Dot with butter or coconut oil.
  5. Cover and bake for 15 minutes.
  6. Remove from oven, stir in raisins, pecans/walnuts, and dried cranberries.
  7. Cover again and bake for an additional 15 minutes until tender and lightly browned.
