  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup ricotta cheese
  • 1/4 cup powdered sugar
  • 1/4 teaspoon cinnamon
  • 1/2 cup mini chocolate chips
  • 1/4 cup granulated sugar for rolling
  • 1 teaspoon cinnamon for rolling

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the egg and vanilla extract until smooth.
  4. Gradually add the dry ingredients to the wet mixture until just combined.
  5. In another bowl, mix ricotta cheese, powdered sugar, cinnamon, and mini chocolate chips until well combined.
  6. Roll dough into 1-inch balls and coat each in cinnamon-sugar mixture before placing them on the prepared baking sheet. Flatten slightly with a glass.
  7. Bake for about 10-12 minutes or until lightly golden around the edges.
  8. Allow cookies to cool for about 5 minutes before transferring them to a wire rack.
  9. Once cooled, spread about a teaspoon of ricotta filling on one flat side of a cookie and sandwich it with another cookie.
