  • 1/4 cup powdered sugar
  • 1/4 teaspoon cinnamon
  • 1/2 cup mini chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, cream softened butter and granulated sugar until fluffy. Beat in egg and vanilla extract.
  4. Gradually mix dry ingredients into the wet mixture until just combined.
  5. In another bowl, combine ricotta cheese, powdered sugar, cinnamon, and mini chocolate chips until smooth.
  6. Roll cookie dough into 1-inch balls; coat each in cinnamon-sugar mixture. Place on baking sheet and flatten slightly.
  7. Bake for 10-12 minutes or until lightly golden; cool on wire rack.
  8. Spread ricotta filling between two cookies to assemble.
