  • 1/3 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup pitted fresh cherries (or thawed frozen cherries)
  • For Topping: 1/2 cup all-purpose flour
  • 1/3 cup brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup cold unsalted butter

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a muffin tin.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. In another bowl, combine milk, vegetable oil, egg, and vanilla until mixed.
  4. Pour the wet ingredients into the dry ingredients and gently stir until just combined. Fold in the cherries.
  5. For the topping, mix flour, brown sugar, and cinnamon in a small bowl. Cut in cold butter until crumbly.
  6. Fill muffin cups two-thirds full with batter and sprinkle topping over each muffin.
  7. Bake for 20–25 minutes or until a toothpick comes out clean.
  8. Allow muffins to cool for five minutes before transferring to a wire rack.
