Ingredients

  • 2 slices of sourdough or artisan bread
  • 1/2 ripe avocado, mashed
  • 1/2 cup cooked shredded chicken (grilled or rotisserie)
  • 2 slices of cheddar or Monterey Jack cheese
  • 1 tbsp mayonnaise or aioli (optional)
  • 1 tsp lemon juice
  • 1 tbsp butter (for toasting)
  • Salt and pepper to taste

Instructions

  1. In a small bowl, mash the avocado with lemon juice, salt, and pepper.
  2. Spread mayonnaise on one side of each bread slice. On the other side of one slice, spread the avocado mixture, then layer with shredded chicken and cheese. Top with the second slice of bread, mayo side facing out.
  3. Heat butter in a skillet over medium heat and grill the sandwich for about 3–4 minutes on each side until golden brown and the cheese has melted.
  4. Remove from the skillet, slice if desired, and serve hot.
