  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • 1 tsp dried thyme or Italian seasoning
  • 2 cups fresh spinach, chopped
  • 1 cup mushrooms, sliced
  • 3 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/4 cup chicken broth
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet over medium heat, heat olive oil and season chicken with salt and pepper. Sear for 5-6 minutes on each side until golden brown.
  3. In the same skillet, sauté minced garlic for one minute. Add sliced mushrooms and cook for about 5 minutes until softened; stir in chopped spinach until wilted.
  4. Pour in heavy cream and chicken broth; simmer for 3-4 minutes until slightly thickened.
  5. Place the seared chicken in a greased baking dish and pour the creamy vegetable sauce over it. Top with mozzarella and Parmesan cheese.
  6. Bake for 15-20 minutes until cheese is melted and bubbly.
