  • 2¼ cups vanilla wafer crumbs
  • ¼ cup brown sugar
  • ½ cup unsalted butter (melted)
  • 1 cup mascarpone cheese
  • ½ cup confectioner’s sugar
  • 1½ tsp vanilla extract
  • ¼ tsp ground cinnamon
  • 23 tsp lemon zest
  • 1 cup whole milk ricotta cheese
  • ¾ cup heavy whipping cream
  • 1⅓ cups mini chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). In a bowl, combine vanilla wafer crumbs and brown sugar. Stir in melted butter until mixed well. Press into the bottom of a pie dish. Bake for 10 minutes and let cool.
  2. In another bowl, whisk together mascarpone cheese, confectioner’s sugar, vanilla extract, ground cinnamon, and lemon zest until smooth. In a separate bowl, beat ricotta cheese and heavy whipping cream until fluffy. Gently fold both mixtures together with 1 cup mini chocolate chips.
  3. Pour the filling into the cooled crust and spread evenly. Sprinkle remaining chocolate chips on top.
  4. Cover with plastic wrap and refrigerate for at least 8 hours or overnight before serving.
