  • 23 tbsp milk (dairy or non-dairy)
  • 1/4 cup mini chocolate chips
  • 2 tbsp honey or maple syrup
  • 1 tsp vanilla extract
  • Pinch of salt
  • Optional: additional chocolate chips for topping

Instructions

  1. In a medium bowl, whisk together almond flour, protein powder, and salt.
  2. In another bowl, mix cashew butter, 2 tablespoons of milk, honey (or maple syrup), and vanilla extract until smooth.
  3. Combine the wet mixture with the dry ingredients until well mixed.
  4. Fold in mini chocolate chips.
  5. Adjust consistency by adding remaining tablespoon of milk if needed.
  6. Roll the mixture into 1-inch balls and place on a parchment-lined plate.
  7. Refrigerate for at least 30 minutes to firm up.
  8. Melt chocolate chips with coconut oil in the microwave until smooth.
  9. Dip each ball in melted chocolate and tap off excess; sprinkle with extra mini chocolate chips.
  10. Refrigerate again until set.
