  • 2 cups + 1 tablespoon all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 10g fresh yeast
  • 3 large eggs
  • 2/3 cup unsalted butter
  • 1 cup whole milk
  • 1 vanilla pod
  • 2 egg yolks
  • 3 tablespoons cornstarch
  • 3/4 cup mini chocolate chips

Instructions

  1. Prepare the brioche dough by mixing flour, sugar, salt, and yeast. Add beaten eggs and knead until smooth. Gradually incorporate butter until well combined.
  2. Let the dough rise under plastic wrap for about 2 hours or until doubled in size.
  3. While the dough rises, prepare the vanilla custard by heating milk and butter with a vanilla pod. In another bowl, whisk egg yolks with sugar and cornstarch. Combine hot milk gradually into egg mixture, then return to heat until thickened.
  4. Roll out the dough and spread cooled custard over half, sprinkling mini chocolate chips on top. Fold over, cut into rectangles, and let rise again for about 2 hours.
  5. Preheat oven to 350°F (180°C). Brush brioches with beaten egg and bake for 10-12 minutes until golden brown.
  6. Prepare a sugar syrup by dissolving sugar in boiling water and brush over baked brioches before serving.
