  • 1 tbsp chia seeds
  • 2 tsp sweetener of choice
  • 6 oz chocolate chips or bars
  • optional: 1 tsp vegetable or melted coconut oil

Instructions

  1. Prepare the raspberry filling by mashing the raspberries into a smooth puree. Combine with chia seeds and sweetener in a saucepan over low heat until bubbly.
  2. Melt the chocolate using a double boiler or microwave method until smooth.
  3. In mini cupcake liners or candy molds, spread a teaspoon of melted chocolate along the sides. Add two teaspoons of warm raspberry filling and cover with more melted chocolate.
  4. Chill in the fridge or freezer until fully set before serving.
