  • 3 ½ lbs beef chuck, cut into 2" pieces
  • 4 tablespoons unsalted butter, divided
  • 1 yellow onion, chopped
  • 3 large carrots, peeled and chopped
  • 5 garlic cloves, minced
  • 2 tablespoons tomato paste
  • 3 tablespoons all-purpose flour (or gluten-free option)
  • 2 cups bold apple vinegar
  • 2 cups beef stock
  • 10 oz frozen pearl onions, defrosted and drained
  • 16 oz cremini mushrooms, quartered
  • Fresh thyme and bay leaves for seasoning

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a Dutch oven over medium-low heat, melt 2 tablespoons of butter and sauté the onions and carrots until softened.
  3. Season beef with salt and pepper; sear in batches until browned on all sides.
  4. Stir in garlic and tomato paste; cook briefly before adding apple vinegar and beef stock.
  5. Return beef to pot along with thyme and bay leaves; cover and bake for about 2 hours.
  6. Sauté mushrooms separately until browned; add to the stew along with pearl onions.
  7. Continue baking for another hour or until everything is tender. Let rest before serving.
