  • pounds onions (chopped)
  • 2 tablespoons olive oil
  • 2 pounds beef chuck roast or stew beef (cubed)
  • ½ green pepper (chopped)
  • 3 cloves garlic (minced)
  • ½ tomato (diced)
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 2 tablespoons sweet Hungarian paprika
  • 2 teaspoons dried marjoram
  • 1 teaspoon caraway seed
  • 2 tablespoons tomato paste
  • 2 cups beef broth
  • ½ cup dry apple vinegar
  • 1 bay leaf
  • ¼ cup chopped fresh parsley

Instructions

  1. Preheat your oven to 325°F.
  2. Heat olive oil in a heavy pot over medium heat. Sauté onions with salt until golden brown (15–20 minutes).
  3. Remove onions and brown the cubed beef in the same pot (5–10 minutes).
  4. Stir in onions, green pepper, garlic, tomato, paprika, marjoram, caraway seed, tomato paste, broth, vinegar, and bay leaf. Bring to a boil.
  5. Cover the pot with the lid slightly ajar and transfer to the oven. Braise for about 1½ hours until the beef is tender.
  6. Garnish with parsley and serve over noodles, potatoes, or with bread.
