  • 1/2 cup powdered sugar
  • 8 oz mascarpone cheese
  • 1/2 cup coconut cream
  • 1 cup heavy cream
  • 14 oz sweetened condensed milk
  • 13.5 oz coconut milk
  • 24 ladyfingers
  • 1/2 cup alcohol-free vanilla extract
  • 1 tsp cinnamon

Instructions

  1. In a bowl, whisk egg yolks with powdered sugar until pale yellow.
  2. Mix in mascarpone, coconut cream, and half the coconut milk until combined.
  3. In a separate bowl, whip heavy cream with remaining powdered sugar until stiff peaks form.
  4. Fold whipped cream into the mascarpone mixture gently.
  5. In another bowl, combine sweetened condensed milk, remaining coconut milk, vanilla extract, and cinnamon.
  6. Quickly dip each ladyfinger into the mixture and layer them in a dish.
  7. Pour half of the cream mixture over the ladyfingers and sprinkle with coconut flakes. Repeat layering.
  8. Chill for at least 12 hours before serving.
