Instructions

  1. Preheat your oven to 400°F (200°C). Wash the sweet potatoes thoroughly and prick them several times with a fork. Place them on a baking sheet lined with parchment paper and bake for about 45 minutes or until tender.
  2. Let the sweet potatoes cool slightly, then slice them in half lengthwise and scoop out most of the flesh into a mixing bowl, leaving some around the edges for structure.
