  • 2 medium carrots, chopped
  • 2 celery stalks, chopped
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 8 oz egg noodles
  • 6 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 tsp dried thyme
  • 2 tbsp fresh parsley, chopped (or 1 tbsp dried)
  • Salt and pepper to taste

Instructions

  1. Prep your ingredients by dicing the onion, chopping the carrots and celery, and mincing the garlic.
  2. In a large pot over medium heat, sauté the onions in olive oil until translucent. Add minced garlic and cook for an additional minute.
  3. Stir in diced chicken breasts and cook until no longer pink inside.
  4. Pour in chicken broth along with chopped carrots and celery; bring to a gentle boil before adding egg noodles.
