  • ½ cup granulated sugar (for the crust)

  • ¾ cup unsalted butter, melted
  • 16 oz full-fat cream cheese, softened
  • ½ cup granulated sugar (for the filling)
  • 2 large eggs
  • 1 tablespoon lemon zest
  • ¼ cup fresh lemon juice
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
  2. In a bowl, mix graham cracker crumbs, flour, sugar, and salt. Stir in melted butter until crumbly.
  3. Press two-thirds of the crumb mixture firmly into the bottom of the prepared dish.
  4. In another bowl, beat cream cheese until smooth; add sugar and eggs one at a time. Mix in lemon zest, juice, and vanilla extract until creamy.
  5. Pour filling over crust and spread evenly. Top with remaining crumb mixture.
  6. Bake for 30–35 minutes or until center is set but slightly jiggly.
  7. Cool at room temperature for an hour, then refrigerate for at least three hours before slicing.
