  • 1/2 tsp sea salt (plus extra to taste)
  • 1 tsp garlic powder
  • ½ tsp paprika
  • 1 cup yellow onion, chopped
  • 5 large cloves garlic, minced
  • 1 (16-oz) jar roasted red peppers, drained
  • 1 (15-oz) can full-fat coconut milk
  • Optional: 1 cup cherry tomatoes
  • Optional: 5 oz baby spinach

Instructions

  1. Heat avocado oil in a large skillet over medium heat. Sauté chopped onions until translucent, then add minced garlic until fragrant.
  2. In a blender, combine roasted red peppers, garlic powder, paprika, and coconut milk; blend until smooth. Pour into the skillet and season with sea salt.
