  • 1 tablespoon all-purpose flour
  • 1 cup heavy cream (or whole milk)
  • ½ cup Parmesan cheese (optional)
  • 1 teaspoon fresh thyme
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Thinly slice the Yukon gold potatoes using a mandolin or sharp knife.
  3. In a pot over medium heat, melt the butter and sauté the minced garlic until fragrant. Stir in flour to create a roux.
  4. Gradually add heavy cream (or milk), stirring until thickened.
  5. Mix in Parmesan cheese, thyme, salt, and pepper until smooth.
  6. Toss potato slices with the creamy sauce in a large bowl.
  7. Arrange the coated potato slices upright in a greased baking dish; pour any leftover sauce on top.
